Kilchoman Genesis tells the story of the creation of Kilchoman whisky - the 1130 day journey from barley to bottle with a desire to revive the tradition of farm distilling. Each stage of the whisky making process has a profound impact on the character of this whisky. Malting is the second stage of this process.

Days 6-12: Kilchoman is one of the few distilleries in Scotland that still practices traditional floor malting, a process that almost all distilleries outsourced when commercial distilling began. The process involves soaking the barley in water before placing it on a concrete floor and regularly turning it by hand. This causes the barley to germinate, which allows starch to be converted into fermentable sugar and alcohol. The labour-intensive nature of floor malting is a major factor in its decline, although it remains at the heart of Kilchoman 100% Islay's philosophy. This bottling is made from a combination of Concerto and Laureate barley malted here at Kilchoman, and Concerto malted by the Port Ellen malthouse.
